My Health Challenge Goals Continue To Evolve
And this is very good! Otherwise, I don’t believe I would be able to get better. I was originally going to go “hardcore, very little carb Paleo/GAPS.” I’m glad I didn’t because that could have been even more detrimental to my health. My body is thriving a lot better on more carbs (and less stress over the foods I’m eating).
(However, each person is different. What you need to do for great health isn’t necessarily what I need to do. Remember to stay in tune with your body and make changes when you need to make).
This week kicked off with a head-splitting migraine. It lasted for three days. I have had longer ones. However, this migraine made me aware of two things: I am working my body too hard and I am not treating my body well.
Also, this migraine was very related to my period. The day after the symptoms subsided (on the fourth day), “Aunt Flo” arrived. My husband told me that he has noticed this happening quite often. I have too. Although I get migraines at other times of the month, a migraine a few days before my period isn’t uncommon at all.
Because of my migraines, my cold body temperatures in the mornings, my fatigue, my firm, jiggly arms (which I’ll explain in just a moment), I really, really think I have a HUGE hormonal problem. My Son’s School Was Very Disappointed That He Was Not Current On His Vaccines.
Although, the administration told me that he really needed his vaccines to be up to date, I just reminded them that I had already turned in a Vaccine Exemption form.
We currently live in Arizona and we are blessed to have 3 different vaccine exemptions: Religious, Medical, and Philosophical. There are also quite a few doctors who are willing to sign waivers (if it gets that far).
However far we’ve come in Arizona, in each school my son has been enrolled in, there is a big sign that says something like this:
“Only Vaccinated Children May Attend School Here.”
Well, um, okay. Let me go right out and stick a bunch of vaccines into my son. I want to make sure you don’t turn us away…
Yeah right.
One mother wasn’t so lucky. though. The school her daughter attended went ahead and vaccinated her daughter for her AND without her permission. A week later, her daughter broke out in a rash. [click to continue…]

GMOs (Genetically Modified Organisms) Have No Place In Our Food Supply At All.
Years ago, I picked up a Greenpeace brochure from an outdoor clothing store I used to shop at. It was titled, “The Non-GMO Shopper’s Guide,” and it had everything you needed to know about which foods do NOT have GMOs in them. It was a very handy guide and I took it everywhere with me. Back then, there were no smart phones or apps (and now they have them for this guide). My brochure was well-used and a bit tattered by the time I got through with it.
What’s the point? Why the heck did I go through all the trouble to ensure that me and my family stay as far away from GMO foods as possible? (When I first got started eating organic and whole foods, I used to leaf through this brochure every single time I went shopping. I would look up each food item at the grocery store to make sure I was eating as safely as possible. It was worth it).

“Soak Your Almonds Before You Eat Them.”
Soaking and Dehydrating your almonds before you eat them or make anything out of them (like almond butter or almond milk) is essential for your good health. Almonds naturally contain phytic acid, which when ingested in large amounts, can impair your absorption of important minerals (like zinc, magnesium, and calcium).
It is super-easy to soak them and dehydrate them. You can also sprout them (more on this later in the post).

I have been eating like crazy this week.
For once, when I eat, I feel full. I didn’t feel this way when I was eating low-carb AND I didn’t feel this way when I tried a green smoothie/juice diet (awhile back). Not even eating a low fat diet has helped me to feel full. The feeling of being full after a meal is amazing!
Deciding to let go of some of the stress that I have normally had with eating in the past has been one of the best decisions I have made. I am eating some of the same foods that I ate after my son was born (and at that time, I was feeling pretty darn good).

Chicken stock is what helped to nourish me back to better health.
My daughter was only 5 weeks old at the time. I came down with pneumonia AND pleurisy. I lived in the hospital for a week, pumping breastmilk like mad, as friends watched our kids for us.
My mother flew in as soon as I got out of the hospital and one of the first things she was make me chicken stock. She even made it with chicken’s feet.
She let it simmer on the stove all day; for hours. The finished stock was rich, dark brown and nourishing.
I drank it as I sat out on our front porch, wrapped in blankets. I watched the Monterey Bay from where I sat; all the blue waves and boats and the barking of the seals. We lived up the hill, a few blocks from the beach. I dreamed of going back to the beach; playing with sandy kids and flying kites.
The chicken stock worked its magic and each time I make it, I remember how it healed me when I was sick and the love that my mother put into it. [click to continue…]
